Tory Aunspach. Thirty years in kitchens, forty-plus restaurant openings, and five years as a private chef on yachts and estates in the Caribbean, the Med and up the US East Coast. I have done engineering work on a private motor yacht and three months at a Fort Lauderdale yard pulling props and fitting gaskets. I could have gone the engineering route. I went back to the galley, but I never forgot who eats last.
These days I own three places in Jersey City: Cafe Alyce, The Wanderer, and One World Pizza, which made Food & Wine's list of the hottest new pizzerias in America in 2026, the only one in New Jersey. I still cook every day.
